Shibata Soba is a time-honored soba noodle house that has been serving up delicious buckwheat noodles for generations. It was founded in 1968 by Masahiro Kobayashi, who learned the art of soba making from a master in Nagano prefecture. The masterful soba chefs meticulously knead, roll, and cut each batch of noodles daily. Luckily, I got there just in time to have the last serving of 100% soba for the day, which is a rare treat! The zaru soba, chilled noodles served with a deeply savory dipping sauce, is an absolute must-try. But the real star is the toropy soba - firm, slightly chewy noodles that maintain their delightful texture even when dipped in the hot broth. A sprinkling of spring onions, wasabi, and a quail egg provide the perfect finishing touches. It’s soba simplicity at its finest!
